Glycine is a natural amino acid found in large amounts in collagen. It is also suitable for sweetening foods/beverages due to its sweet taste, which is free of added flavour. It is heat resistant and can be used in cakes and hot drinks. Its sweetness is about the same as normal granulated sugar.
Glycine is the most abundant amino acid in collagen-type proteins. It is present in small amounts in other protein sources. Nowadays, we consume much less collagen-type protein than our ancestors did, as stew, bone broth, jelly, tripe and similar foods are no longer in fashion. So there has been a significant shift in the proportion of amino acids that we get from our protein intake (for example, glycine has declined relative to others.) This was not the case during our evolution, so there is a suspicion that this may have harmful consequences. The beneficial effects of glycine supplementation also support this suspicion.
